I forgot to post it, but it was my BIRTHDAY!!!!!!!!!!!!!!!!!!!!! Big 24! We went out to eat some awesome stuff and for the second time TRON. Yup it was the perfect day! But most of all! I want to thank everyone who remembered me. Thank you all!!

Pappas Canaries

Today I tried Marcel Vigneron's Pappass Canaries. It's a potato dish with sea salt. I boiled the little potato with sea salt. After the potato was done, I drained the water and let the heat colour the potato. It looks almost like the potato was tossed through sand or dust. I butter based the porkchop with garlic, thyme, basil and oregano. The sauce was a spicy chili mayo with a squeeze of limon and olive oil. A simple dish with lots of different techniqes.

I am so glad to see Kevin Bacon as Sebastian Shaw and January Jones as Emma Frost of the Hellfire Club in the new X-Men: First Class. I really can't wait for this movie, it will be totally different than the previous three.

Taco

This weekend I made two version of a fish taco. The first one was with a classic corn tortilla with pollock, beans, corn, tomato and lettece. The second taco was a lettece wrapped taco with crispy catfish, corn and tomato. I used a tempura batter for the catfish and then I deep fried it. Both of the taco dishes I used lemon to fish it off.

Spidey

I am a huge Spider-Man fan. I grew up watching every Spider-Man cartoons. I had comics, toys, clothing and many more Spider-Man merch. So when they announced they would do a Spider-Man moviem, I was in glee! And it was pretty sure that Sony would do a trilogy. But as a true true fan, I got a little bit disappointed. In the first movie, Norman Osborn/Green Goblin dies. In the second movie Otto Octavius/Dr. Octopus dies and in the third movie, Eddie Brock was played by Topher Grace which was a mistake ( well in the Ultimate Spider-Man sage, Eddie Brock was a wimp ). But I always remember Eddie/Venom as this big guy. And there were other disappointed factors. Like, you'll only see Flash Thompson in the first movie for a few minutes. Gwen Stacy appearded in the third movie, but in the comics, she is Pete's first love. And the Green Goblin doesn't really measured up to the true Goblin. But now, years later since the third Spider-Man. They announced to do a reboot. With a different cast, new story and a new universe. And after seeing plot lines, cast/characters and the new suit. I really feel like a kid reborn! The new suit looks amazing. The new Peter Parkers is I think awesome, Andrew Garfield ( The Social Network ). Also and finally Gwen Stacy, the first love! The new vilian is The Lizard, also one of my personal favourites. So I really can't wait for this!

Succotash

A new dish! Succotash with catfish. Succotash is a vegetable dish with beans, corn and other veggies. My version is with kidney beans, corn, green bell peppers and tomato. The colours are amazing, vibrant fresh colours! The catfish was sautéed with oil and butter. Simple and clean!

This looks that the perfect sun. Today I ate a simple pizza with an egg on it. Delicious and different!

Chickens

This weekend, I did two chicken dishes. The first was a sticky lemon chicken and the second was a simple oven roasted chicken. Both dishes I used potato as a side. With the first chicken dish, I used honey, soy sauce, lemons, chilli, basil and thyme. The potato was simple sautéed with oil, salt and pepper. The second chicken dish was first prepped in a pan, for the colour. I seasoned it with soy, lots of chilli, lots of garlic, union and most important chicken stock for extra flavour. The mash was simple seasoned with salt, pepper and chives. And ofcourse my favourite, peas.

The roast was the perfect dish to end the weekend.

So H&M let me choose my own Christmas presents. So I took the chance to pick out the Jamie Oliver Recipe box, but little did I know. I came with Jamie's penne, pesto and pasta sauce. So it was an absolute delight!

Beans

1-2-3 as simple as ABC. This dish is simple, fast and most important extremly delicious. White beans in tomato sauce with dried basil, organo, thyme and chiliflakes. The beans had some heat, but it was perfectly balanced. I also made some flatbread. A simple flatbread to dip it in the beans.

And yes it time for the new year. 2011! What has 2011 got in store for this young lad? Well, first things first. Let's set a theme for the new year. Last year's theme was: change. Yup, there were a lot of changes in 2010. Dropped out of school was the biggest upset. I never got over it, but in 2011 it will be different. This year's theme will be, chance. I've learned that I have to take chances when I get the opportunity. And this year, you all will meet Miguel 2.0, better and improved. A harder worker, maybe a bit smarter and even got a driver's licence. So watch out peoples! 2011: the year of chances.
